While we don’t listen to all the rumors, we can confirm that the return of Juicebox for Summer 2026 is full of wonder, juiciness, and all the pink flamingo fun.
Candy-like Tootsie Pop sweetness, refreshing zing of a homemade Arnold Palmer in your favorite glass pitcher, and some blackberries thrown in for garnish make this release one we are truly excited to bring to your cup at home. (Or here at the cafe where we serve it flash-brewed.)
Penstock is truly grateful to have been introduced to El Rincon farm via Equation Coffee, as this Colombian blend is arguably perfect for those warm days when you need a refreshing pick-me-up or when you’re looking for a mocktail to sip on slowly on the rocks. Whether you're chilling by the pool or enjoying a picnic in the park, whether you prefer it as a crisp cold brew, espresso, or a pourover, Juicebox delights the senses.
Note: In the past we may have called it a “cold brew” blend - because we love it served cold - but it’s just as great as espresso, drip, pourover, and as iced coffee or iced americano.

We hear music in the air with the arrival of Yessica Parra’s Washed Papayo. Not to be confused with the fruit (‘ya), this varietal is new for Penstock to roast and offer you at home. From a brilliant young fourth generation coffee grower, this coffee is elegant, comforting, and memorable. Light, yet full in richness and balance. Tasting notes reminded us of freshly served tres leches cake, some dulce de leche, and a medley of tropical fruits.
Yessica and her brother, Diego, as mentioned earlier are fourth generation coffee growers and names we feel you will be seeing much more often thanks to their unique profiling and processing at Diwan Coffee and El Mirador farm.

Clean, subtly sweetly “green”, and delicious. From the brilliant farmer Fabian Acevedo, of Finca Providencia de Jeshua. Finca Providencia, a multigenerational family-run farm grew and produced a wonderful transition coffee from Spring to Summer with this varietal. We are grateful for our friends at Equation Coffee for introducing us to this offering from Fabian and look forward to you enjoying it at home or in either of our cafes while it lasts.
Lo Prometido Catuai Rojo is a fun lot from an old friend - a naturally processed Catuai Rojo varietal from Luis Balladarez’s farm, Lo Prometido - you may also know him as the farmer behind our other offering of Un Regalo de Dios and previous releases of La Bendicion. This coffee, our second of three total releases from Luis this year, is sweet and juicy, with vibrant notes of strawberry, and kiwi pieces of fruit cut up and swirled into an iced cream soda. Similar to Luis’s naturals, it is clean and smooth drinking. We are proud to share this lot, and we hope you enjoy it as much as we do.

Old-school traditional family coffee farming meets new-school summer vibrancy and brightness from yet another brand new varietal offering not yet seen in Penstock: Colombia. This fun find from our cupping day spent with Equation Coffee hails from Diego Horta’s “El Rincon”, a farm located between two mountain peaks. This naturally processed coffee is one of the brightest coffees in our menu, with cranberry candy, lemon acidity, and rich carnival fresh caramel.

Tasting notes: Sugar, spice, and all things nice… paired with apple streusel.
M-03: An absolute delight to cup, roast, and brew. Reminds us of the crumble found on top of muffins, a spoonful of homemade apple streusel, honey cake, and a spiral cinnamon bun with cardamom and sweet glaze on top. Beautiful round lactic acidity, and balanced from beginning to end. Complex, full, and well worth your while.
From Finca El Paraiso’s Diego Bermudez to our roaster to your mug, M-03 is truly delightful for the cold winter months.

Penstock Coffee is an official retailer of Chemex Brewing equipment. As part of that endeavor, we've been putting together a little guide to brewing on a Chemex Brewer. If at this point your thinking, "Chemex? What…is that?! Are they peddling pharmaceuticals??" You wouldn't be far off. Chemex brewers were, in fact, invented by a chemist, but for brewing coffee instead of over-the-counter medications (which...some claim coffee is).
What They Are
Chemex brewers come in several shapes and sizes. In general, though, these glass brewers have an hourglass shape with a wooden collar (for gettin' a good grip).
How They Work
They function like a normal drip brewer without the automation. You place a filter on top, add ground coffee, and then add water. Check out the Penstock Coffee Chemex Brewing Guide for further instructions.
Why They Rock
Control: unlike automated drip brewers, you can control the temperature of the water and ensure that all the dry grounds get soaked (two classic drip brewing problems).
Clean up: after you serve all your coffee, just add some hot water, swirl, and dump; you've got a clean Chemex!
Taste: the Chemex filters were specially formulated to get a super clean tasting cup of coffee. They offer much of the flavor of a french press , but a cleaner cup. No occasional, residual grounds on the bottom or oils floating on top.
Good looks: they is fine looking.

LEARNING LABS
Latte Art Basics
This is a beginner-level class for people interested in learning about what goes into the beautiful drinks they get at their favorite coffee shop. This experience is perfect for the novice/enthusiast, to a fun, friends-night-out, coffee geeks, and…you! The goal of this class is for participants to leave with an understanding of the components of a milk-based espresso beverage and be able to pour a basic heart. We will go over basic espresso extraction, milk steaming, and pouring technique. Using that information, each person will then get a chance to practice pouring their beverage. The class will end with a fun “latte art throwdown” competition. Class sizes are limited to 6 people to ensure the best experience and run from 6:00 p.m. to 8:00 p.m.
