Fudgey with hints of praline and almond. Balanced, apple acidity and a heavy body. Very drinkable.

This boutique specialty coffee farm, nestled in the mountains of Fraijanes, Guatemala, is managed by Ellen Prentice and her husband. Ellen Prentice, an Agricultural Engineer, meticulously nurtures the farm. She ensures that only the ripest cherries get selected and that all post-harversting processes are to the highest standards. The most prevalent varieties in the 27 hectare farm are Caturra, Bourbon, Catuai, Pacas, and Pache, which are all processed in the farms mill and sun dried on patios or raised beds.

This is our sixth year purchasing from the Prentice family, and we are excited to present this year's lot. Called Nacimiento and developed for us by blending individual day harvests, it consists of cherries harvested from their Pacas trees, then fermented in water for 24+ hours before washing and sun drying, and finally blended from several day lots to achieve a lovely flavor profile of gala apple and orange, toffee, ganache, and praline.
